Chicken Salad Farfalle
- 2 Boned and Skinned Chicken Breasts
- 1lb Bow Tie Pasta (Farfalle)
- 1 jar roasted Peppers
- 1/2 Jar Black Olives, Pitted
- 1 7oz Container Marinated Artichoke
- Extra Virgin Olive Oil
- Lemon Juice
- Grated Cheese
- Fresh Basil
- Salt/Pepper
Instructions
Drain the Artichoke Hearts and reserve the liquid. Marinate the chicken Breast in the artichoke liquid along with a touch of olive oil. Grill chicken, set aside, let cool and cut into slices. Cook Bow Ties to the desired degree of doneness. Drain roasted peppers and cut into strips. Quarter artichoke hearts and toss with remaining ingredients except chicken. Mix together 1/4 cup olive oil and the juice of one lemon. Add to pasta and toss. Arrange on a platter and garnish with strips of chicken and sprinkle with Grated cheese. ENJOY!!!
