Spring Onion Soup
- 2 tbsp butter
- 2 cups scallions, with some green tops
- 2 tsp minced fresh ginger
- 3 tbsp light soy sauce
- 1/2 cup dry white wine
- 6 cups chicken broth
- salt
- 1 cup pea pods, sliced diagonally into thirds
