Sicily Honey Roasted Chicken

• 1 2 1/2-3lb chicken, quartered
• 1/4 cup extra virgin olive oil
• 2 tbs orange juice
• 2 tbs honey
• 1 1/4 tsp paprika
• 1 tbsp minced garlic

Instructions

Preheat oven to 425 degrees. In a small bowl, combine olive oil, orange juice, (OK kinds, what are we making??? Yes, that's right, we are using an acid and an oil..we're making a vinaigrette!!!) paprika, honey and garlic. Brush chicken pieces with mixture. Place chicken on a rack in a roasting pan and bake for 15 minutes. Reduce oven temperature to 400 and baste chicken again. Continue roasting and basting until skin is crisp and the internal temperature of the chicken is 180 degrees. If you don't have an oven thermometer, roast until the juices run clear.
