Red Onion Raita
- 1 tsp cumin seeds
- 1 small garlic clove
- 1 small green chili
- 1 large red onion
- 2/3 cup plain yogurt
- 2 tbs fresh chopped cilantro
- 1/2 tsp sugar
- salt to taste
Instructions
Toast the cumin seeds in a dry frying pan for about 2 minutes or until the begin to pop. Lightly crush the seeds. (You can do this with a mortar and pestle or the heel of a heavy bladed knife.) Remove the seeds from the chili and finely chop with the red onion and the garlic. Place yogurt in a bowl and stir in chili, red onion, garlic, cumin seeds and cilantro. Add sugar and salt to taste. Chill well before serving.
