Thai Peanut Sauce
- 1/4 cup creamy peanut butter
- 1/4 cup unsweetened coconut milk
- 2tbsp fresh lime juice
- 1 tbsp Tamari or other soy sauce
- 2 tsp light brown sugar
- 2 tsp chili paste
Instructions
In a small bowl, whisk together all the ingredients until well blended. Taste to adjust seasoning. Use at once or cover and refrigerate for up to one week. Bring to room temperature before serving. Makes about 3/4 cup.
