Bistecca alla Pizziola

  • 2ea 1/2 pound Sirloin Strip Steaks
  • 2 Plum Tomatoes
  • 2 tbs olive Oil
  • 2 tbs Fresh Oregano
  • 2 tbs Fresh basil
  • 4 cloves garlic, minced
  • 1 tsp fresh ground black pepper
  • 1 tsp salt
  • 1/4 cup red wine

Instructions

Preheat grill. Brush steaks and season with salt and pepper. Cut tomatoes in half. Grill tomatoes cut side down until they have good grill marks. Remove from grill and remove skin. In a sauce pan, saute the garlic in remaining olive oil. When the garlic just starts to turn brown, (be careful not to burn), add red wine, and plum tomatoes. Smash the tomatoes with a fork, season with salt and pepper, and let simmer for about 10 minutes. Cook steaks to your desired degree of doneness. Remove steaks from grill and let sit for 5 minutes. Slice steaks against the grain, on the diagonal, and place on a warmed platter. Spoon sauce over steaks and drizzle with a little more olive oil if desired.
