Recipes from Tom's Market

Grilled Marinated Shrimp with Rice Pilaf

  • 1 bottle of your favorite oil and vinegar based salad dressing. (mine is Sundried Tomato Vinaigrette)
  • Your choice of the main ingredient, e.g.; 4 shrimp per person, 8oz chicken breast per person, 1 veal chop, etc.
  • Your favorite rice pilaf
  • 2 chopped tomatoes
  • 1/4 cup sliced black olives
  • Gremolata for a garnish

Instructions

In a shallow bowl, place cleaned shrimp, chicken or veal. Cover with salad dressing. Let marinate in the fridge at least 12 hours, preferably overnight. Prepare rice pilaf according to the box directions. While the rice is cooking, grill shrimp, chicken, or veal. (This is a good place for the "expert grill person" to get involved. After all, cooking can be a family event!!!) When the rice is done, add the chopped fresh tomatoes, and the sliced black olives. Arrange rice and shrimp on a serving platter, and sprinkle (couldn't quite find the right culinary term for "sprinkle") Gremolata over the entire platter. Serve hot, and even drizzle a little extra virgin olive oil over the whole lot!!!
