Simple Beef Brisket

  • 2-3 lb Beef brisket
  • olive oil
  • 1 cup chopped onion
  • 1/2 cup water'
  • 2 tbs Dijon or grain style mustard
  • 3/4 tbsp prepared horseradish
  • 1/2 cup red wine
  • 1/2 cup water
  • 1/2 cup beer
  • 2 beef bouillon cubes
  • 1 1/2 tbsp honey
  • 3 cloves garlic
  • 1 bay leaf
  • Salt and pepper
  • Flour for dusting

Instructions

Heat olive oil in a large Dutch oven. Season Brisket with salt and pepper and dust lightly with flour. Brown brisket on both sides. Add onions and garlic and sauté for 2 minutes. Add remaining ingredients, stir, cover and cook on low for about 3 1/2 hours until meat is fork tender. Add 1lb baby red potatoes and 1 lb baby peeled carrots 25-30 minutes before done if desired.
