Caciola

  • 5 lb stew meat
  • 2 large onions
  • 4 tbsp Lard
  • 2 buds Garlic
  • 2 tbsp Hot crushed pepper sauce
  • 1 tbsp Salt
  • 1 cup red table wine
  • 2 tbs. vinegar (optional)
  • 1 tbs. Paprika
  • 1 tbs. Black pepper
  • 3 or 4 Cups water

Instructions

Cut stew meat cubes in halves. Slice onions in large rings. Add all ingredients to stew meat and place in a large pan. Cook at low heat until meat is tender. Keep stirring so it won't stick to the bottom of the pan. When the mixture gets dry, add 1 cup of water at a time. Cook for about 3 hours.
