Cherry Tomato Relish
- 12 red cherry tomatoes, cut in 1/2
- 12 yellow cherry tomatoes, cut in 1/2
- 1/4 cup fine diced red onion
- 1/4 cup capers
- 1 tbsp chopped fresh basil
- 1 tbsp chopped fresh parsley
- 2 tbsp caper pickling liquid
- 2 tbsp extra virgin olive oil
- salt and fresh ground black pepper to taste
Instructions
Hey....Once again, it's quick and it's easy. Combine all ingredients in a bowl and let set at room temperature for 2 hours before serving.
